I didn’t name this recipe as Irish bannocks because I had recently seen a lady in Shetland demonstrating a similar recipe, without fruit, and still called bannocks, she cooked hers in a pan/griddle on the hob, few minutes each side then on the two cut sides for a couple more minutes.
