We enjoyed the most delicious almond delights when we were in Sicily and bought a box as a gift for someone. She was thrilled with them which made me wonder if they are easy to make. Did a little googling and discovered they are called paste di mandorla. I’ve made a tray of 20 this afternoon and very pleased with them. They look as if they will be crunchy and hard but the centre is soft and chewy. I’m taking mine as a gift to a neighbour shortly who has invited us for drinks in her garden but kept 2 back for us! The ingredients are basically ground almonds icing sugar egg white almond extract
But looking at different recipes, you can vary the ingredients a little. So easy to make. Let me know if you give them a go.
Love the video CCLL , I thought it was a spoof at first, I am guessing that 'almond flour' is what we call ground almonds?
I do love almonds, I have a handful, ( about 10) every day to help with cholesterol, and it really does work, I will definitely give these a go, they look pretty and sound delicious.
