My family don’t like Christmas pudding and for years I’ve mad a frozen meringue Eaton Mess pud but I feel we need a change. any suggestions please for something simple, maybe frozen with ice cream, light, and delicious.
10oz chocolate digestives 3oz marg or butter melted
This makes about 2 flan dishes or a rectangular cake tray.Mix them together and press it into the tray then put it in the fridge to set.
9oz marshmallows 4tbsp milk 12 oz plain choc ( I find you can get away with using a cheap choc. I use the Tesco Miss Molly dark choc and it’s fine) 2 tbsp strong coffee ( you can use instant if you want but real is better. That’s a personal preference though) 3/4 pint double cream whipped.
Put the marshmallows in a pan with the milk and melt over a low heat. When it’s melted let it cool just a bit. Melt the chocolate (microwave is fine)
Mix everything together. You don’t think it’s going to come together but it does. Pour it over the base and then put it into the fridge to set. It takes a few hours.
I am not a fan either, we've had a bombe which Jamie Oliver showed on one of his Xmas programs a few years ago, and we're also having a pavlova this year too.
Loving all of your suggestions and thanks for the recipe Magggzzz. My OH used to love his mother’s trifle so I think I’ll make one of those. I’ve got a lovely cheesecake recipe but it is a baked one.

This recipe is messy but easy.
It freezes just fine.

There is a lot to be said for being part of a group, and the support and friendship that is gained from this.
You could try one of the special ours that I used to have. A sponge clan case, a tin of Mandarin oranges and a sachet of quick jel. Arrange your oranges in a 'decorative ' pattern, cover in quick jel and serve with squirty cream.Trisha We all used to think that it was really posh.
