I find I'm cooking the same things over and over again. I need some new ideas. I think we should all share our signature dishes. Mine is chicken hot pot. Whenever I've cooked this and I've even done it for dinner parties with plates of pickles as sides, it all get wolfed down.
Cook a chicken, let it cool a bit then take all the meat off. Chop the meat up and store it in the fridge. Boil up the bones and the cooking liquid for a bit. Even just 10 mins is enough but a bit longer if you have time. It gets all the flavour out. Strain all the liquid into the cooking pot. You'll need a big one. Add a chicken stock cube if you want; this gives it a better depth of flavour but can be a bit salty. To the cooking liquid add a tin of mushy peas (be careful as some of them are flavoured with mint and this makes it taste disgusting as I found out once) then as much veg as you want and cut up potatoes. You can get away with just onions and carrots but I like swede and leeks as well. Simmer this till all the veg is good and soft. Thicken any way you want. I am lazy and use gravy granules, either chicken or beef. Then add all the chicken pieces. Try not to stir it too much after you've added the chicken as you want to keep the pieces as whole as possible.
Pour into a big dish and cover with flaky pastry. Again I'm lazy and buy mine. If I don't have any in then I make a suet crust pastry because it's easier to handle. Another option is to make dumplings for the top. Or even just eat it as it is.
You can make this with cut up chicken breasts but it really is not as good. It is quicker though. Another option is to use a ready cooked chicken from the supermarket.
Great with red cabbage.
This is a fairly plain dish but it's always been a popular one. When I've made it for a dinner party I've tarted up the table with bowls of pickles and a nice crusty loaf. Some years back I remember people talking about the in thing for dinner parties being what was known as peasant cuisine. This fit right in!!
