I tried this recipe for the first time last night, it was delicious so I thought I'd share it with you:
Ingredients: Chicken (I used a pack of skin on/bone-in thighs which only cost £2, but you could use breast or skinless/boneless thighs if you want to lower the calorie content), tin of apricot halves (I used ones in juice but the recipe used in syrup), some soft apricots, 2 vegetable stock cubes (or you could probably substitute with others if you don't have vegetable), 1 tablespoon of onion gravy granules or beef stock cube, 1 tablespoon of cornflour.
Method: Brown the chicken pieces in olive oil (or oil of your choice), place them in the slow cooker, pour in the tin of apricot halves & the juice/syrup, add the vegetable stock cubes & a handful of soft apricots (don't worry about apricot overload, they shrink down to nothing when they cook), cook on low/high for an hour (depending on your slow cooker & how long you want it to take), then stir in the gravy granules/beef stock cube, pop the top back on and cook for 4/5 hours (or less if you have chosen high heat) then an hour before it's done, dissolve 1 tablespoon of cornflour in a little cold water and stir that in to the pot to thicken the sauce. With the lid back on, leave for a further hour to cook then serve with rice & veg or whatever accompaniment you fancy. There was enough for the 2 of us to have a hearty portion and 2 further portions for the freezer, so very economical.
Cheap, easy and very satisfying, plus apricots are full of fibre so good for you too. Enjoy!
